Vapor pressure is what controls the evaporation rate of moisture from foods in CVAP cabinets. The controls on a CVAP cabinet can be set so that the vapor pressure surrounding the food is the same as the food itself. In that case the food neither looses nor gains moisture. It neither dries out or gets soggy. It is in a state of 'equilibrium'.

With CVAP, the vapor pressure, or rate of evaporation, is set using the differential control method, an integral and exclusive part of the CVAP concept.
