Winston Industries launches the next generation of CVap® products

Winston Industries announced that they are launching the next generation of CVap® products. “This is a very significant breakthrough in cooking equipment,” says Valerie Shelton, Winston CEO. NAFEM guests and the press are invited to preview these exciting developments at Winston Industries’ booth #3405.

The new generation of CVap products is the brain child of Winston Shelton. Shelton first introduced CVap equipment in 1980 as a holding /proofing cabinet. Its Controlled Vapor Technology proved to excel in all ovening processes. And now, Winston is expanding performance features with the new GenII CVap. There are no limits to what it can do!

Many features have been optimized to enhance the benefits of CVap, and it’s more energy efficient than ever. Most important is the ability for the culinarian to place the food in the oven and truly walk away without worrying about unsafe temperatures or rushing back to remove the foods from the oven. A few of the many enhancements available with the Gen II CVap include:

• The new Auto Cook feature roasts meats to precise end temperatures and textures then automatically switches to a hold mode. Ideal for roasting and holding overnight.

• The Time Cook feature is perfect to thaw, proof, poach, confit, braise, steam, roast, bake or bagless sous vide. This feature also automatically switches to a hold mode and the sequentialized cooking process can be programmed 99 hours in advance.

• The revolutionary Night Watch feature holds foods at a safe temperature all night.

• The advanced food temperature and text control feature performs self-monitoring procedures throughout the cycle and re-adjusts as necessary to achieve the best possible foods.

• The helpful Serve/Assist button compensates for frequent door openings so heat is not lost during peak serving times.

• An adroit design conserves energy and water, fulfilling all Green and Sustainability Initiatives. Winston Industries is also committed to use the most energy efficient materials and methods to manufacture CVap products and is building the equipment to last longer – meaning less landfill waste.
